3 cups of milk
3 cups of flour
4 or 5 eggs
Boil the milk with the lemon peel and cinnamon stick. Add the flour and mix. Add the eggs, one by one. These are fried in oil and on a gentle fire.
Malassadas de Batata (Potato Cakes)
1 kg ( 105.82 ounces) flour
500 g (17.64 ounces) sweet potato
1 soup spoon
Salt and water, to taste
Heat up a little water, from which a little is taken to dissolve the baking powder and add the slat to the remaining water. On a bowl, crush the potato with your hands, add the dissolved baking powder. Add the water little by little and then the flour and the eggs. Mix all together very well and let the dough rest for 20 minutes in the bowl, covered with a towel. After the dough has reached a certain volume and is light, cut into pieces with your hands, into small balls or strips, and sprinkle with flour. Place them on a tray, on top of a table, to rest well. After about 30 minutes, they will be light and ready to be cut in the desired size and fried in a very hot oil. Serve with treacle or sugar.
